1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
1 tablespoon cornstarch
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
-
In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt.
-
Slowly whisk in the milk and cream until the mixture is smooth.
-
Place the saucepan over medium heat and cook, whisking constantly, until the mixture thickens and begins to bubble, about 5–7 minutes.
-
Remove from heat and stir in the vanilla extract.
-
Let the mixture cool slightly, then pour into popsicle molds.
-
Insert sticks and freeze for at least 4–6 hours, or until completely frozen.
-
To release the fudgesicles, run warm water over the outside of the mold for a few seconds and gently pull out.
Notes
-
For extra chocolatey flavor, stir in a few tablespoons of mini chocolate chips before freezing.
-
Use silicone molds for easier release.
-
These fudgesicles can be stored in the freezer for up to 2 weeks.
