  • 1 lb shrimp, peeled and deveined
  • 1 cup white vinegar
  • 1 cup water
  • 1/2 cup olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1 tablespoon red pepper flakes
  • 1 tablespoon black peppercorns
  • 1 bay leaf
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon coriander seeds
  • 1 small onion, thinly sliced

Instructions

  1. Prepare the Brine:
    • Bring the water and vinegar to a boil in a medium-sized pot, then reduce the heat to low.
    • Stir in garlic, salt, sugar, red pepper flakes, black peppercorns, bay leaf, mustard seeds, and coriander seeds. Simmer for 5 minutes.
  2. Cook the Shrimp:
    • Add shrimp to the pot and cook for 2-3 minutes until they turn pink and are just cooked through.
  3. Cool and Combine:
    • Remove the pot from heat and let the shrimp mixture cool for 10 minutes.
  4. Assemble:
    • Add the sliced onion to a clean jar. Pour the cooled shrimp and brine mixture over the onions.
  5. Refrigerate:
    • Seal the jar and refrigerate for at least 24 hours before serving to allow the flavors to meld.
