Creamy, nutty, and perfectly sweet, this pistachio fudge combines white chocolate and pistachio pudding with crunchy pistachios for a delightful treat. It’s quick to make and perfect for gifting or enjoying during the holidays!

Ingredients

  • Chocolate: 3/4 cup white chocolate chips ๐Ÿซ
  • Butter: 6 tablespoons, softened ๐Ÿงˆ
  • Liquid: 1/3 cup water ๐Ÿ’ง
  • Pudding Mix: 1 package (4-serving size) instant pistachio pudding mix ๐Ÿฎ
  • Sugar: 3 cups powdered sugar ๐Ÿฌ
  • Nuts: 1/2 cup shelled pistachios, roughly chopped ๐ŸŒฐ

Instructions

Step 1: Prepare the Pan

  1. Line an 8×8-inch square baking pan with foil, leaving some overhang on the edges for easy removal. Set aside.

Step 2: Melt the Base Ingredients

  1. In a large microwave-safe bowl, combine the white chocolate chips, butter, and water.
  2. Microwave on high for 1 minute, then stir until the mixture is smooth and the chocolate chips are melted. If necessary, microwave for an additional 30 seconds, stirring again until fully melted.

Step 3: Add Pudding Mix and Sugar

  1. Stir the dry pistachio pudding mix into the melted chocolate mixture until fully incorporated.
  2. Gradually add the powdered sugar, 1 cup at a time, mixing thoroughly after each addition until the mixture is smooth and thick.

Step 4: Add Pistachios and Press Into Pan

  1. Fold in the chopped pistachios until evenly distributed.
  2. Press the fudge mixture evenly into the prepared baking pan using a spatula or your hands.

Step 5: Chill and Slice

  1. Place the pan in the refrigerator and chill for at least 2 hours, or until the fudge is firm.
  2. Once set, lift the fudge out of the pan using the foil overhang. Peel off the foil and slice the fudge into squares using a sharp knife.

Storage:

  • Store in an airtight container in the refrigerator for up to 1 week or freeze for longer storage.

Notes

  • For an extra festive touch, sprinkle some crushed pistachios or edible glitter on top before chilling.
  • If you prefer a smoother fudge, finely chop the pistachios instead of leaving them in chunks.
