Ingredients

Scale

Whole Chicken

  • 1 whole chicken (about 45 lbs)

Preserved Lemons

  • 23 preserved lemons, quartered

Garlic

  • 45 cloves of fresh garlic, peeled

Olive Oil

  • 23 tablespoons of olive oil

Fresh Herbs

  • 12 tablespoons of fresh rosemary or thyme

Salt and Pepper

  • Salt and pepper to taste

Instructions

  1. Prep the Chicken: Begin by preheating your oven to 375°F (190°C). Rinse the whole chicken under cold water and pat it dry with paper towels. This step is crucial for achieving crispy skin.
  2. Season the Chicken: Rub the chicken with olive oil, ensuring it’s coated evenly. Generously season the inside and outside with salt and pepper, then stuff the cavity with quartered preserved lemons and garlic cloves for maximum flavor.
  3. Add Fresh Herbs: Sprinkle the fresh herbs over the chicken, tucking some under the skin. This allows the herbs to infuse their aromatic qualities into the meat as it roasts.
  4. Roast the Chicken: Place the chicken in a roasting pan and transfer it to the preheated oven. Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken halfway through to keep it moist.
  5. Rest and Serve: Once cooked, remove the chicken from the oven and let it rest for at least 10 minutes. This resting period helps the juices redistribute, resulting in tender meat. Carve and serve with your favorite sides!

Notes

  • Quality Ingredients: Choose organic chicken and fresh herbs for the best flavors.
  • Marinate Overnight: For even more flavor, marinate the chicken with preserved lemons and herbs overnight.
  • Use a Meat Thermometer: Checking the internal temperature ensures perfectly cooked chicken.
  • Let it Rest: Allowing the chicken to rest before carving locks in the juices.
  • Save the Drippings: Use the drippings for a delicious gravy or sauce.
