These Pumpkin Pecan Muffins are rich, flavorful, and easy to make. They feature a creamy cream cheese center with a delightful pecan topping, perfect for fall or any time of the year.

  • 12 paper cupcake liners
  • 1 package Pumpkin Spice Bar Mix
  • ¾ cup water
  • 3 tablespoons butter, melted
  • ¾ cup chopped pecans, divided
  • ½ (8 ounce) package cream cheese

Instructions

  • Preheat Oven: Preheat oven to 350°F (175°C). Place paper liners in a 12-count muffin pan.
  • Prepare Muffin Batter: In a medium bowl, combine the Pumpkin Spice Bar Mix packet 1, water, and melted butter. Mix until well combined. Stir in ½ cup chopped pecans. Divide ⅔ of the batter among the muffin pan wells. Set the remaining batter aside.
  • Prepare Cream Cheese Mixture: In a small microwave-safe bowl, microwave the cream cheese on HIGH for 20-30 seconds until softened. Whisk in Pumpkin Spice Bar Mix packet 2 until smooth.
  • Assemble Muffins: Dollop the cream cheese mixture over the batter in each muffin well. Top with the remaining batter, gently spreading it over the cream cheese. Sprinkle the tops with the remaining ¼ cup chopped pecans.
  • Bake: Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Cool: Allow muffins to cool before serving.
