- ¾ cup water
- 3 tablespoons butter, melted
- ¾ cup chopped pecans, divided
- ½ (8 ounce) package cream cheese
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Place paper liners in a 12-count muffin pan.
- Prepare Muffin Batter: In a medium bowl, combine the Pumpkin Spice Bar Mix packet 1, water, and melted butter. Mix until well combined. Stir in ½ cup chopped pecans. Divide ⅔ of the batter among the muffin pan wells. Set the remaining batter aside.
- Prepare Cream Cheese Mixture: In a small microwave-safe bowl, microwave the cream cheese on HIGH for 20-30 seconds until softened. Whisk in Pumpkin Spice Bar Mix packet 2 until smooth.
- Assemble Muffins: Dollop the cream cheese mixture over the batter in each muffin well. Top with the remaining batter, gently spreading it over the cream cheese. Sprinkle the tops with the remaining ¼ cup chopped pecans.
- Bake: Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
