Ingredients

Scale

All-Purpose Flour

  • 1 cup

Almond Flour

  • 1/2 cup

Butter

  • 1/2 cup, softened

Sugar

  • 1/4 cup

Egg Yolk

  • 1

Vanilla Extract

  • 1 teaspoon

Raspberry Jam

  • 1/2 cup

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This ensures that your cookies bake evenly and develop a lovely golden color.
  2. Prepare the Dough: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg yolk and vanilla extract, mixing until well combined. Gradually add the all-purpose flour and almond flour, mixing until a soft dough forms.
  3. Shape the Cookies: Using your hands, roll the dough into small balls about 1 inch in diameter. Place them on a lined baking sheet, spacing them about 2 inches apart. Use your thumb or the back of a measuring spoon to create a small indentation in the center of each ball.
  4. Fill with Jam: Carefully spoon a small amount of raspberry jam into each indentation, being sure not to overfill. The jam will bubble up while baking, so a little goes a long way!
  5. Bake the Cookies: Bake the cookies in your preheated oven for 12-15 minutes, or until the edges are lightly golden. Remove them from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Chill the Dough: If the dough is too soft, chill it in the refrigerator for 30 minutes before shaping.
  • Use Quality Jam: Opt for high-quality raspberry jam for the best flavor in your cookies.
  • Don’t Overbake: Keep an eye on the cookies to prevent them from becoming too hard; they should be soft in the center.
  • Experiment with Flavors: Feel free to add almond extract for a more intense almond flavor.
  • Store Properly: Keep your cookies in an airtight container to maintain their freshness.
