  • 1 1/3 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 10 tablespoons unsalted butter, melted
  • 1 tablespoon vanilla extract
  • 2/3 cup raspberry jam (e.g., Smucker’s Simply Fruit)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, allowing some overhang for easy removal.
  2. In a medium mixing bowl, combine oats, flour, brown sugar, cinnamon, baking soda, and salt.
  3. Add melted butter and vanilla extract to the dry ingredients. Mix until the mixture resembles coarse crumbs.
  4. Press about 2 1/2 cups of the crumb mixture into the prepared pan to form an even base.
  5. Spread the raspberry jam evenly over the crust, leaving a small border around the edges.
  6. Sprinkle the remaining crumb mixture over the jam layer, gently pressing it down.
  7. Bake for 25–30 minutes or until the top is golden brown.
  8. Allow to cool completely in the pan before lifting out using the parchment paper and cutting into bars.

Notes

  • For a firmer texture, refrigerate the bars for a few hours before cutting.
  • Feel free to substitute raspberry jam with your favorite fruit jam.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for longer shelf life.
