- 1 1/3 cups all-purpose flour
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- 10 tablespoons unsalted butter, melted
- 1 tablespoon vanilla extract
- 2/3 cup raspberry jam (e.g., Smucker’s Simply Fruit)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, allowing some overhang for easy removal.
- In a medium mixing bowl, combine oats, flour, brown sugar, cinnamon, baking soda, and salt.
- Add melted butter and vanilla extract to the dry ingredients. Mix until the mixture resembles coarse crumbs.
- Press about 2 1/2 cups of the crumb mixture into the prepared pan to form an even base.
- Spread the raspberry jam evenly over the crust, leaving a small border around the edges.
- Sprinkle the remaining crumb mixture over the jam layer, gently pressing it down.
- Bake for 25–30 minutes or until the top is golden brown.
- Allow to cool completely in the pan before lifting out using the parchment paper and cutting into bars.
Notes
- For a firmer texture, refrigerate the bars for a few hours before cutting.
- Feel free to substitute raspberry jam with your favorite fruit jam.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for longer shelf life.
