Ingredients

Scale
  • For the Dough:
    • 3 cups all-purpose flour
    • 1/4 cup granulated sugar
    • 1 packet (2 1/4 tsp) active dry yeast
    • 1/2 tsp salt
    • 1/2 cup warm milk (110°F)
    • 1/4 cup unsalted butter, melted
    • 1 large egg
  • For the Raspberry Filling:
    • 1 cup fresh or frozen raspberries
    • 1/4 cup granulated sugar
    • 1 tsp cornstarch
  • For the Cream Cheese Glaze:
    • 4 oz cream cheese, softened
    • 1 cup powdered sugar
    • 2 tbsp milk
    • 1/2 tsp vanilla extract

Instructions

  • Make the Dough:
In a large mixing bowl, combine the flour, sugar, yeast, and salt. Add the warm milk, melted butter, and egg. Mix until a soft dough forms. Knead the dough on a floured surface for 5–7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
  • Prepare the Raspberry Filling:
In a small saucepan over medium heat, combine the raspberries, sugar, and cornstarch. Cook, stirring frequently, until the mixture thickens. Let it cool completely.
  • Assemble the Rolls:
Roll out the dough into a rectangle approximately 12×15 inches. Spread the cooled raspberry filling evenly over the dough, leaving a small border around the edges. Roll the dough tightly into a log and slice into 12 equal pieces. Place the rolls in a greased 9×13-inch baking dish. Cover and let rise for another 30 minutes.
  • Bake:
Preheat the oven to 350°F (175°C). Bake the rolls for 20–25 minutes or until golden brown. Allow to cool slightly.
  • Make the Glaze:
In a mixing bowl, beat together the cream cheese, powdered sugar, milk, and vanilla extract until smooth. Drizzle over the warm rolls before serving.

Notes

  • Make sure the raspberry filling has cooled before spreading it on the dough to avoid affecting the rise.
  • For extra sweetness, you can add a bit more powdered sugar to the glaze to your liking.
