  • 1 cup whole milk, warmed
  • 2 1/4 tsp (1 packet) active dry yeast
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg

  • 3 1/2 cups all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • 1/2 tsp salt

For the Filling:

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 tbsp ground cinnamon

For the Cream Cheese Frosting:

  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Activate the Yeast: In a small bowl, mix the warm milk and granulated sugar. Sprinkle the yeast over the top and let it sit for 5-10 minutes, until foamy.
  2. Make the Dough: In a large mixing bowl, combine the yeast mixture, melted butter, egg, and red food coloring. In another bowl, whisk together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms. Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.
  3. Let the Dough Rise: Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  4. Prepare the Filling: In a small bowl, mix the softened butter, brown sugar, and cinnamon until combined.
  5. Assemble the Rolls: Roll out the dough into a 12×18-inch rectangle. Spread the filling evenly over the dough. Starting from one long side, tightly roll up the dough into a log. Slice into 12 equal pieces and place them in a greased 9×13-inch baking dish.
  6. Second Rise: Cover the rolls with a towel and let them rise for 30 minutes, or until puffy.
  7. Bake: Preheat your oven to 350°F (175°C). Bake the rolls for 20-25 minutes, until lightly golden and cooked through.
  8. Make the Frosting: While the rolls bake, beat together the cream cheese, butter, powdered sugar, and vanilla until smooth and creamy. Once the rolls are done, frost them with the cream cheese frosting and serve warm.
