  • ½ cup creamy peanut butter
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup mini chocolate chips
  • 24 mini Reese’s peanut butter cups, unwrapped

Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin pan.
  2. Cream together butter, peanut butter, granulated sugar, and brown sugar until smooth.
  3. Beat in egg and vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to wet mixture and mix until combined.
  6. Fold in mini chocolate chips.
  7. Roll dough into 1-inch balls and place into muffin cups.
  8. Bake for 10–12 minutes until lightly golden.
  9. Immediately press a mini Reese’s cup into each cookie while warm.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack.
