Warm and creamy, this homemade rice pudding straight from the oven is comfort food at its finest! With hints of vanilla, butter, and nutmeg, it’s the perfect dessert for cozy moments.

Ingredients

  • 1 cup rice (white or brown, cooked according to package directions)
  • 1 tablespoon butter (added to water when cooking rice)
  • 3 large eggs, beaten
  • 2 cups milk
  • 1 cup sugar
  • 1 ½ tablespoons vanilla extract
  • ½ cup raisins (optional)
  • 5 pats of butter (for topping)
  • Nutmeg (for sprinkling on top)

Instructions

  • Cook the rice according to package directions, adding 1 tablespoon of butter to the water while cooking.
  • In a separate bowl, mix the beaten eggs, milk, sugar, and vanilla.
  • Once the rice is cooked, combine it with the egg mixture and stir well.
  • If desired, fold in raisins.
  • Pour the rice mixture into a buttered oven-safe dish.
  • Place 5 pats of butter on top of the rice pudding.
  • Sprinkle nutmeg over the top for added flavor.
  • Bake in a preheated oven at 325°F (165°C) for 1 hour, or until the pudding is set and slightly golden on top.
  • Let the pudding set for 1 hour after baking to allow it to firm up.

Notes

  • For a creamier texture, use whole milk or half-and-half instead of regular milk.
  • If you prefer a thicker pudding, add an extra egg or reduce the baking time slightly.
  • You can substitute raisins with dried cranberries or other dried fruits for a twist.
