Crunchy Caesar Kale Wrap is a plant-based wrap loaded with air-fried chickpeas, creamy vegan Caesar dressing, fresh greens, avocado, and hummus, all wrapped up in a tortilla for a hearty, nutritious lunch or dinner.

Ingredients

  • 2/3 cup cooked chickpeas
  • 1/2 tbsp olive oil
  • 1 tsp soy sauce
  • 1/2 tsp maple syrup
  • 1/2 tsp smoked paprika
  • 1 tsp garlic powder, divided
  • 2 tbsp vegan mayonnaise
  • 1 tbsp lemon juice
  • Pinch of salt
  • 23 large leaves kale (or other greens)
  • 1/41/2 avocado
  • 23 tomato slices
  • 2 heaping tbsp hummus
  • 1 large tortilla (or gluten-free tortilla)

Instructions

  1. Drain and rinse the chickpeas if using canned. Add them to a bowl with olive oil, soy sauce, maple syrup, smoked paprika, and 1/2 tsp garlic powder. Mix well.
  2. Spread chickpeas on a lined baking sheet and air fry at 400°F (200°C) for 10–11 minutes (or roast in the oven; see notes).
  3. Roughly chop the kale or greens.
  4. Prepare the Caesar mayo sauce by mixing vegan mayo, lemon juice, remaining 1/2 tsp garlic powder, and a pinch of salt. Add hot sauce if desired. Toss in the chopped greens and mix well.
  5. Once chickpeas are ready, remove them from the air fryer or oven.
  6. To assemble: spread hummus on the tortilla, then add the dressed greens, roasted chickpeas, avocado slices, and tomato slices. Fold in the sides, roll up tightly.
  7. Pan-fry the wrap in a frying pan over medium heat for 1–2 minutes per side, until golden and crispy. Cut in half and enjoy immediately!

Notes

  • For oven method, bake chickpeas at 400°F (200°C) for 20–25 minutes, stirring halfway through.
  • Customize with your favorite greens or add sliced cucumbers for extra crunch.
  • Best served fresh, but leftovers can be stored in the fridge and reheated in a pan.
