- 1 cup (150g) cherry tomatoes, halved
- 1 cup (120g) cucumber, diced
- 1/4 cup (60ml) olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
Instructions

Cook the Tortellini:
- Prepare the tortellini according to the package instructions. Once cooked, drain and rinse under cold water to cool. Set aside.

- In a large mixing bowl, combine the cooled tortellini with diced salami, chopped mozzarella, halved cherry tomatoes, and diced cucumber.
