  • 12 oz (340g) tortellini pasta
  • 1 cup (150g) salami, diced
  • 1 cup (150g) mozzarella cheese, cubed or pearl mozzarella balls
  • 1 cup (150g) cherry tomatoes, halved
  • 1 cup (120g) cucumber, diced
  • 1/4 cup (60ml) olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)

Instructions

  1. Cook the Tortellini:
    • Prepare the tortellini according to the package instructions. Once cooked, drain and rinse under cold water to cool. Set aside.
  2. Prepare the Salad Ingredients:
    • In a large mixing bowl, combine the cooled tortellini with diced salami, chopped mozzarella, halved cherry tomatoes, and diced cucumber.
  3. Make the Dressing:
    • In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and black pepper. Adjust seasoning to taste.
  4. Combine and Toss:
    • Drizzle the dressing over the salad mixture. Toss everything together gently until all ingredients are evenly coated.
  5. Chill and Serve:
    • Cover and refrigerate the salad for at least 30 minutes to let the flavors meld. Serve chilled and enjoy!
