Description

- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/2 cup unsalted butter, cubed
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon sea salt (plus more for topping)
Instructions
- Line an 8×8-inch baking pan with parchment paper and lightly grease. Set aside.
- In a heavy-bottomed saucepan, combine sugar, corn syrup, butter, and heavy cream.
- Cook over medium heat, stirring constantly until mixture begins to bubble and butter is melted.
- Reduce heat to medium-low and stir continuously for 10–15 minutes, until mixture thickens and reaches a deep golden color (around 240°F if using thermometer).
- Remove from heat, stir in vanilla and 1 teaspoon sea salt.
- Pour into prepared pan and spread evenly. Let sit at room temperature for about 2 hours until set.
- Sprinkle with flaky sea salt. Lift caramel from pan and cut into small squares with a sharp knife.
Notes
- Use a candy thermometer for best results but it’s optional.
- Do not rush the cooking — medium-low heat prevents burning.
- Wrap bites in wax paper for easy gifting and storage.
- Store in a cool, dry place to prevent melting or sticking.
