Description

Chewy, buttery salted caramel bites with a hint of vanilla and a finish of flaky sea salt. These rich little squares are the perfect blend of sweet and salty — perfect for gifts or indulging at home.


Ingredients

Scale
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon sea salt (plus more for topping)


Instructions

  1. Line an 8×8-inch baking pan with parchment paper and lightly grease. Set aside.
  2. In a heavy-bottomed saucepan, combine sugar, corn syrup, butter, and heavy cream.
  3. Cook over medium heat, stirring constantly until mixture begins to bubble and butter is melted.
  4. Reduce heat to medium-low and stir continuously for 10–15 minutes, until mixture thickens and reaches a deep golden color (around 240°F if using thermometer).
  5. Remove from heat, stir in vanilla and 1 teaspoon sea salt.
  6. Pour into prepared pan and spread evenly. Let sit at room temperature for about 2 hours until set.
  7. Sprinkle with flaky sea salt. Lift caramel from pan and cut into small squares with a sharp knife.

Notes

  • Use a candy thermometer for best results but it’s optional.
  • Do not rush the cooking — medium-low heat prevents burning.
  • Wrap bites in wax paper for easy gifting and storage.
  • Store in a cool, dry place to prevent melting or sticking.
