Ingredients

- 3/4 cup granulated sugar
- 2 tablespoons water
- 1 1/2 cups heavy cream
- 1 cup whole milk
- 3 tablespoons cornstarch
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter
- 1/2 teaspoon sea salt (plus extra for topping)
- Whipped cream and crushed nuts for garnish (optional)
Instructions
- In a small bowl, whisk together cornstarch, egg yolks, and 1/2 cup of milk until smooth. Set aside.
- In a heavy-bottomed saucepan, combine sugar and water. Cook over medium heat without stirring until it turns deep amber.
- Carefully pour in the cream and remaining milk while whisking. Be cautious as the mixture will bubble up.
- Slowly whisk in the yolk mixture. Continue cooking over medium heat, whisking constantly, until the mixture thickens.
- Remove from heat and stir in butter, vanilla extract, and sea salt. Strain the mixture through a fine mesh sieve.
- Pour into glass cups or ramekins and let cool slightly before refrigerating for at least 4 hours.
- Top with whipped cream, crushed nuts, and a sprinkle of sea salt before serving.
Notes
- Use a heavy-bottomed saucepan to prevent the sugar from burning.
- Strain the pudding before chilling for the smoothest texture.
