Description

These silky Salted Caramel Puddings blend buttery caramel with a hint of sea salt, topped with whipped cream and nuts for the perfect sweet-salty bite.


Ingredients

  • 2 tablespoons water
  • 1 1/2 cups heavy cream
  • 1 cup whole milk
  • 3 tablespoons cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon sea salt (plus extra for topping)
  • Whipped cream and crushed nuts for garnish (optional)


Instructions

  1. In a small bowl, whisk together cornstarch, egg yolks, and 1/2 cup of milk until smooth. Set aside.
  2. In a heavy-bottomed saucepan, combine sugar and water. Cook over medium heat without stirring until it turns deep amber.
  3. Carefully pour in the cream and remaining milk while whisking. Be cautious as the mixture will bubble up.
  4. Slowly whisk in the yolk mixture. Continue cooking over medium heat, whisking constantly, until the mixture thickens.
  5. Remove from heat and stir in butter, vanilla extract, and sea salt. Strain the mixture through a fine mesh sieve.
  6. Pour into glass cups or ramekins and let cool slightly before refrigerating for at least 4 hours.
  7. Top with whipped cream, crushed nuts, and a sprinkle of sea salt before serving.
