This Savory Classic Reuben Bake is a casserole twist on the beloved deli sandwich. Layers of rye bread, corned beef, sauerkraut, and gooey Swiss cheese come together in a rich, flavorful dish perfect for family dinners or potlucks.

  • 6 cups rye bread, cubed
  • 1 lb sliced corned beef, chopped
  • 2 cups sauerkraut, drained
  • 2 cups Swiss cheese, shredded
  • 1/2 cup Thousand Island dressing
  • 1/2 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 4 large eggs
  • 1 1/2 cups milk

Instructions

  • Preheat Oven:
    Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • Layer the Bake:
    • Spread half of the cubed rye bread evenly in the baking dish.
    • Layer with chopped corned beef, sauerkraut, and 1 cup of shredded Swiss cheese.
    • Top with the remaining cubed rye bread.
  • Prepare the Custard Mixture:
    In a bowl, mix the Thousand Island dressing, mayonnaise, Dijon mustard, eggs, and milk until well combined.
  • Assemble and Bake:
    • Pour the custard mixture evenly over the bread layers.
    • Sprinkle the remaining 1 cup of shredded Swiss cheese on top.
  • Bake:
    • Cover the dish with foil and bake for 30 minutes.
    • Remove the foil and bake for an additional 15 minutes until the top is golden and bubbly.
  • Finish:
    • For a crispy top, broil for the last 2-3 minutes of baking (optional).
    • Let the bake cool for a few minutes before serving.

Notes

  • Swap out Thousand Island dressing for Russian dressing for a slight flavor twist.
  • Use pumpernickel bread if you prefer a darker, richer bread base.
