- 1 cup dry orzo pasta
- 1 cup cooked shrimp, peeled and deveined
- 1 cup cooked mussels
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Bring a pot of salted water to a boil.
- Cook orzo according to package directions until tender.
- Drain the orzo and allow it to cool slightly.
- In a large bowl combine orzo, shrimp, mussels, cherry tomatoes, and cucumber.
- Whisk olive oil, lemon juice, garlic, salt, and black pepper.
- Pour dressing over the salad and toss gently.
- Sprinkle chopped parsley on top.
- Serve chilled or slightly cool.

- Chill the salad for deeper flavor.
- Add extra lemon juice before serving if desired.
