Description

A bright and refreshing seafood orzo salad with tender shrimp, mussels, fresh vegetables, and a light lemon olive oil dressing.


Ingredients

  • 1 cup dry orzo pasta
  • 1 cup cooked shrimp, peeled and deveined
  • 1 cup cooked mussels
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Bring a pot of salted water to a boil.
  2. Cook orzo according to package directions until tender.
  3. Drain the orzo and allow it to cool slightly.
  4. In a large bowl combine orzo, shrimp, mussels, cherry tomatoes, and cucumber.
  5. Whisk olive oil, lemon juice, garlic, salt, and black pepper.
  6. Pour dressing over the salad and toss gently.
  7. Sprinkle chopped parsley on top.
  8. Serve chilled or slightly cool.

Notes

  • Chill the salad for deeper flavor.
  • Add extra lemon juice before serving if desired.
  • Use fresh herbs for the best aroma.
