Chewy, crunchy, and naturally sweet, these sesame-date crystal bites are the perfect no-bake snack with a hint of nutty toasted sesame and creamy coconut.

- 1 cup Medjool dates, pitted
- 1/2 cup raw almonds
- 1/2 cup raw cashews
- 1 tablespoon chia seeds
- 3 tablespoons toasted sesame seeds
- 1/4 cup unsweetened shredded coconut
- 1 teaspoon vanilla extract
- Pinch of sea salt
Instructions
- Toast sesame seeds in a dry skillet over medium heat for 2 minutes until fragrant. Set aside.
- In a food processor, blend dates, almonds, and cashews until a sticky dough forms.
- Add chia seeds, shredded coconut, vanilla extract, and sea salt. Pulse until well combined.
- Line a tray with parchment paper.
- Scoop out tablespoon-sized portions and roll into balls. Chill dough if too sticky.
- Roll each ball in toasted sesame seeds until fully coated.
- Place bites on the tray and refrigerate for at least 15 minutes to firm up.
- Enjoy chilled or at room temperature.
Notes
- Use soft Medjool dates or soak firmer dates in warm water for 10 minutes before blending.
- Double the recipe and freeze half for future snacking.
- Add a pinch of cinnamon or cardamom for extra flavor.
- Wear gloves or lightly oil hands to make rolling easier.
