A simple and comforting dish, this shredded chicken gravy over mashed potatoes is perfect for family dinners or meal prep. The chicken is slow-cooked with creamy gravy and served over buttery mashed potatoes for a filling, delicious meal.

Ingredients

  • 2 cans cream of chicken soup
  • 2 cans water
  • 2 packets chicken gravy mix
  • 2 packs chicken breast
  • Mashed potatoes (I use the ones that come in a bag and just add some butter)
  • Garlic powder, to taste
  • Salt, to taste
  • Pepper, to taste

Instructions

  • Prepare the Crockpot:
    • In the crockpot, combine the cream of chicken soup, water, and chicken gravy packets. Stir well to mix.
  • Season the Chicken:
    • Season the chicken breasts with garlic powder, salt, and pepper.
  • Cook the Chicken:
    • Place the seasoned chicken breasts into the crockpot with the gravy mixture. Set the crockpot to cook on low for 7-8 hours.
  • Shred the Chicken:
    • Once the chicken is cooked, remove it from the crockpot and shred it using two forks. Return the shredded chicken back into the crockpot and stir it into the gravy mixture.
  • Prepare the Mashed Potatoes:
    • While the chicken is cooking, prepare the mashed potatoes according to package instructions, adding butter to taste.
  • Serve:
    • Serve the shredded chicken and gravy over the mashed potatoes. Rolls pair wonderfully with this dish.

Notes

This recipe yields plenty of leftovers, making it ideal for meal prep or feeding a group. It can easily feed 5 people or provide meals for multiple days.
