- 4 medium russet potatoes
- 4 tablespoons butter, melted
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon salt (plus more to finish)
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Preheat oven to 425°F. Line a baking sheet with parchment paper or foil.
- Mix melted butter, olive oil, garlic powder, thyme, salt, and pepper in a small bowl.
- Place each potato on a cutting board. Slice thin slits across each, stopping before cutting all the way through.
- Brush potatoes generously with the butter-oil mixture, getting between the slices.
- Place potatoes on baking sheet. Bake for 50–60 minutes, brushing again halfway through.
- Optional: Broil for 2–3 minutes at the end for extra crispiness.
- Sprinkle with sea salt and parsley before serving.
Notes
- Use chopsticks on either side of the potato to avoid cutting all the way through.
- Yukon Gold potatoes can be used for a creamier version.
- Add shredded cheese during the last 10 minutes for a cheesy twist.
- Reheat leftovers in the oven to regain crispiness.
