This hearty Cowboy Casserole is a comforting and easy-to-make meal packed with layers of ground beef, potatoes, veggies, and a creamy sauce. Made in a slow cooker, it’s perfect for a busy day when you need a warm, delicious dinner ready to go.

For the Casserole:

  • 1 lb (450 g) ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 medium potatoes, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 can (14 oz) diced tomatoes, drained
  • 1 can (14 oz) corn, drained
  • 1 cup green beans (fresh, frozen, or canned, drained)
  • 1/4 cup milk
  • 1/4 teaspoon crushed red pepper flakes (optional, for a little heat)
  • Additional shredded cheddar cheese for topping (optional)
  • Chopped parsley or green onions for garnish (optional)

Instructions

  • Brown the Ground Beef:
    In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is softened. Drain any excess fat.
    Stir in smoked paprika, garlic powder, salt, and black pepper. Set aside.
  • Prepare the Creamy Sauce:
    In a bowl, mix the cream of mushroom soup, sour cream, and milk until smooth.
  • Layer the Ingredients:
    In the slow cooker, start with a layer of thinly sliced potatoes, followed by half of the cooked beef mixture.
    Spread half of the diced tomatoes, corn, and green beans over the beef.
    Drizzle half of the creamy sauce over the layers and sprinkle with some shredded cheddar cheese.
    Repeat the layers, ending with the remaining potatoes, sauce, and cheese.
  • Cook:
    Cover the slow cooker and cook on low for 6–7 hours or on high for 3–4 hours, until the potatoes are tender.
  • Add Final Toppings:
    About 15 minutes before serving, sprinkle additional cheddar cheese on top, if desired. Cover and let it melt.
  • Serve:
    Garnish with chopped parsley or green onions for a fresh finish. Serve warm.

Notes

  • For a spicier kick, add the crushed red pepper flakes or a dash of hot sauce to the sauce mixture.
  • You can substitute the green beans with another vegetable of your choice, like peas or carrots.
