Description
A deliciously melted smoked gouda veggie sandwich, filled with sautéed mushrooms, spinach, and bell peppers. A perfect vegetarian melt that’s satisfying and flavorful.
Ingredients
- Smoked Gouda cheese: 4 slices
- Whole wheat or white bread: 2 slices
- Spinach: 1/2 cup, fresh
- Mushrooms: 1/2 cup, sliced
- Bell pepper: 1/2 cup, thinly sliced
- Butter: 1 tablespoon, for toasting
- Olive oil: 1 tablespoon, for sautéing
- Salt and pepper: To taste
Instructions
- Prepare the vegetables: Heat the olive oil in a skillet over medium heat. Add the sliced mushrooms and bell peppers, sautéing for 3-4 minutes until softened. Add spinach and cook until wilted. Season with salt and pepper to taste.
- Assemble the sandwich: Butter one side of each bread slice. Place a slice of smoked gouda on the non-buttered side of one slice of bread. Top with the sautéed vegetables and another slice of smoked gouda, then place the second slice of bread on top, buttered side facing out.
- Grill the sandwich: Heat a skillet over medium heat and place the sandwich in the skillet. Grill each side for 3-4 minutes, or until the bread is golden brown and the cheese is melted.
- Serve and Enjoy: Slice the sandwich in half and serve immediately with a side of pickles or a light salad.
Notes
- For extra flavor, add a drizzle of balsamic glaze or a spread of hummus inside the sandwich.
