- 3 cups cooked white rice (day-old works best)
- 2 tablespoons oil
- 1 1/2 cups frozen peas and carrots (thawed)
- 1 onion, chopped and diced
- 1 tablespoon minced garlic
- 1 cup frozen shrimp, peeled and deveined
- 3 tablespoons low-sodium soy sauce
- 1 teaspoon sesame oil
Instructions

Cook the Shrimp:
In a pan, heat 1 tablespoon of oil and fry the shrimp until cooked. Set aside. -
Cook the Vegetables:
In the same pan, add the diced onion and sauté until tender. Add minced garlic and sauté until fragrant. -
Add the Rice and Veggies:
Add the cooked rice, peas, and carrots to the pan. Mix well and cook for 2-3 minutes to heat everything through. -
Season the Rice:
Stir in the soy sauce and sesame oil, then return the cooked shrimp to the pan. Mix until thoroughly combined and cook for another 1-2 minutes. -
Serve:
Once everything is well-combined and heated through, serve the fried rice immediately and enjoy!
Notes
- This recipe works best with day-old rice as it helps prevent the rice from becoming too mushy during cooking.
- Feel free to substitute with other vegetables or proteins like chicken or pork.
