Description

Sobia is a traditional Middle Eastern drink made with rice, coconut, and milk. It’s creamy, mildly sweet, and perfectly refreshing when served ice-cold with a hint of vanilla and cinnamon.


Ingredients

  • ½ cup uncooked white rice
  • ½ cup shredded coconut
  • 4 cups cold water
  • 2 cups whole milk or coconut milk
  • ½ cup granulated sugar (or to taste)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cardamom (optional)
  • Cinnamon or coconut flakes, for garnish


Instructions

  1. Soak the rice in water overnight or for at least 6 hours. Drain and rinse.
  2. In a blender, combine soaked rice, shredded coconut, cold water, milk, sugar, vanilla, and cardamom. Blend on high until smooth.
  3. Strain the mixture through a fine mesh sieve or cheesecloth into a large pitcher.
  4. Chill in the refrigerator for at least 1–2 hours.
  5. Stir before serving. Taste and adjust sweetness as desired.
  6. Pour into glasses, top with cinnamon or coconut flakes, and serve chilled with or without ice.

Notes

  • Blend thoroughly for the creamiest texture.
  • Strain twice for an ultra-smooth finish.
  • Use coconut milk for a dairy-free version.
  • Serve over crushed ice for extra refreshment.
