This Southern Coca Cola Cake is a rich, indulgent dessert with a unique twist from the classic Coca-Cola soda. Moist, chocolatey, and topped with a decadent frosting, this cake is perfect for any celebration or just a sweet treat!

For the Cake:

  • 1 cup Coca Cola (real, not diet)
  • 1/2 cup oil
  • 1 stick butter
  • 6 tablespoons cocoa powder
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

For the Frosting:

  • 1 stick butter
  • 3 tablespoons cocoa powder
  • 6 tablespoons cream or milk
  • 1 teaspoon vanilla extract
  • 3 3/4 cups confectioner’s sugar

Instructions

Step 1: Make the Cake

  1. In a saucepan, combine the Coca-Cola, oil, butter, and cocoa powder. Bring to a boil, stirring occasionally.
  2. In a separate bowl, whisk together the sugar, flour, and salt.
  3. Pour the boiling Coca-Cola mixture over the dry ingredients and beat well until fully combined.
  4. Add the eggs, buttermilk, baking soda, and vanilla extract to the mixture. Beat until smooth.
  5. Pour the batter into a greased and floured 13×9 inch baking pan.
  6. Bake at 350°F (175°C) for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove the cake from the oven and cool for about 10 minutes before frosting.

Step 2: Make the Frosting

  1. In a saucepan, combine the butter, cocoa powder, and milk. Heat over medium until the butter melts, stirring occasionally.
  2. Remove from heat and beat in the vanilla extract and powdered sugar until smooth and spreadable.
  3. While the cake is still warm, spread the frosting evenly over the top.

Notes

  • For extra flavor, add chopped pecans or walnuts on top of the frosting before it sets.
  • This cake is best served slightly warm or at room temperature.
