  • 23 tablespoons vegetable oil or bacon grease (for frying)

Instructions

  • Prepare the Batter:
    In a mixing bowl, combine the cornmeal, salt, sugar (if using), and baking powder. Gradually add the hot water, stirring until the batter is smooth. The consistency should be thick but spreadable. If needed, add a little more water.
  • Heat the Oil:
    Heat the vegetable oil or bacon grease in a large skillet over medium heat. The oil should be hot enough to sizzle when a drop of batter is added.
  • Fry the Hoecakes:
    Scoop 2-3 tablespoons of batter into the skillet for each hoecake, flattening slightly with the back of a spoon. Cook for 2-3 minutes on each side, or until golden brown and crispy.
  • Drain and Serve:
    Remove the hoecakes and drain on a paper towel-lined plate. Serve hot with butter, honey, or alongside soups, stews, or greens.

Notes

  • For extra flavor, use bacon grease for frying the hoecakes.
  • You can adjust the sweetness of the hoecakes by adding more or less sugar.
  • If you prefer a thicker batter, reduce the amount of water slightly.
