For the Chicken:

  • 2 boneless chicken thighs or breasts
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp chili paste (e.g., gochujang or sambal oelek)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tbsp olive oil

For the Creamy Sauce:

  • 1/2 cup mayonnaise
  • 2 tbsp chili paste (adjust to taste)
  • 1 tbsp soy sauce
  • 1 garlic clove, minced
  • 1/2 tsp lemon juice
  • Water (to adjust consistency)

For the Noodles:

  • 2 packs instant ramen noodles (discard seasoning packets)
  • 1 tbsp sesame oil
  • 1 tsp soy sauce
  • 1/2 tsp garlic powder
  • 1/4 tsp chili flakes

For Garnish:

  • 2 green onions, sliced
  • Optional: Sesame seeds or additional chili flakes

Instructions

  • Marinate and Cook the Chicken:
    • In a bowl, combine soy sauce, honey, chili paste, garlic powder, and smoked paprika. Marinate the chicken in this mixture for at least 15 minutes.
    • Heat olive oil in a skillet over medium-high heat. Cook the chicken for 4-5 minutes on each side, or until caramelized and fully cooked. Let rest for a few minutes, then slice into bite-sized pieces.
  • Prepare the Creamy Sauce:
    • In a small bowl, whisk together mayonnaise, chili paste, soy sauce, minced garlic, and lemon juice. Add water to thin the sauce to your desired consistency.
  • Cook the Noodles:
    • Cook the ramen noodles according to the package instructions. Drain and toss with sesame oil, soy sauce, garlic powder, and chili flakes.
  • Assemble the Bowl:
    • Place the seasoned noodles in a bowl. Add the caramelized chicken on top and drizzle with the creamy chili sauce.
    • Garnish with sliced green onions, sesame seeds, or additional chili flakes for extra heat.
