This Spicy Chicken Sandwich features crispy, juicy chicken thighs marinated in buttermilk and Sriracha, fried to golden perfection, and topped with a zesty homemade spicy mayo on a toasted bun. Perfect for a satisfying lunch or dinner with a fiery kick!

Ingredients

  • 4 pieces boneless skinless chicken thighs, pounded to even thickness
  • 1 cup buttermilk
  • 2 tbsp Sriracha or your favorite hot sauce
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • Flour Mixture:
  • 1 cup all-purpose flour
  • 3 tbsp cornstarch
  • 1 tbsp paprika powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp cayenne powder (reduce for less spice)
  • Spicy Mayo:
  • 1/2 cup mayonnaise
  • 2 tbsp Sriracha or hot sauce
  • To assemble:
  • cooking oil for frying
  • 4 burger buns, lightly toasted with butter
  • lettuce, tomato, and/or pickles, sliced, or your choice of toppings

Instructions

  1. In a medium bowl, combine buttermilk, Sriracha, salt, pepper, and garlic powder. Add chicken thighs and marinate in the fridge for at least 4 hours or overnight.
  2. In a large bowl, whisk together flour, cornstarch, paprika, salt, pepper, garlic powder, and cayenne powder.
  3. Add 2 tbsp of the marinade to the flour mixture and mix with a fork. Dredge each piece of chicken in the flour mixture, coating well.
  4. Mix Sriracha and mayonnaise together to make the spicy mayo. Set aside.
  5. Heat oil in a deep skillet to 325°F (165°C). Fry chicken thighs for about 3-4 minutes per side or until golden brown and the thickest part registers 165°F (75°C).
  6. Spread spicy mayo on both sides of the toasted buns, add your preferred toppings and the fried chicken. Serve immediately and enjoy!

Notes

  • For best results, marinate the chicken overnight for extra tenderness and flavor.
  • Adjust the amount of cayenne and Sriracha to your desired heat level.
  • Chicken breasts can be used instead of thighs if preferred.
