Description

These crispy, golden potatoes are packed with bold Mexican flavors from chili powder, cumin, and paprika, and finished with a zesty lime and cilantro topping. A perfect side dish for tacos, grilled meats, or a festive meal!

Ingredients

Scale

  • 4 large potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced

Instructions

  • Preheat the Oven:
    • Preheat your oven to 400°F (200°C). The high heat ensures the potatoes turn golden and crispy.
  • Season the Potatoes:
    • In a large bowl, combine diced potatoes with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper. Toss well to ensure every piece is evenly coated with the flavorful spices.
  • Arrange on a Baking Sheet:
    • Spread the seasoned potatoes in a single layer on a baking sheet. Make sure the potatoes are not overcrowded to allow even roasting and crisping.
  • Roast the Potatoes:
    • Place the baking sheet in the oven and roast for 25-30 minutes, stirring halfway through to ensure even browning and crispiness on all sides.
  • Add Finishing Touches:
    • Remove the potatoes from the oven and immediately drizzle them with lime juice. Sprinkle with chopped fresh cilantro for a burst of freshness and zesty flavor.
  • Serve:
    • Transfer to a serving plate and enjoy as a side dish with grilled meats, tacos, or as part of a festive Mexican meal.

Notes

  • For extra heat, you can add a pinch of cayenne pepper or chili flakes to the seasoning mix.
  • These potatoes also make a great addition to a Mexican-style breakfast bowl or brunch.
