Description

Savory, cheesy, and packed with tender spinach, these golden-baked squares are perfect for brunches, lunches, or on-the-go snacks.

Ingredients

  • Frozen Chopped Spinach: 10 ounces, thawed and squeezed dry
  • Shredded Cheddar Cheese: 1 cup
  • Shredded Mozzarella Cheese: ½ cup
  • All-Purpose Flour: ½ cup
  • Baking Powder: 1 teaspoon
  • Milk: ¾ cup
  • Eggs: 3 large
  • Onion: ½ cup, finely chopped
  • Salt: ½ teaspoon
  • Black Pepper: ¼ teaspoon
  • Olive Oil or Butter (optional): 1 tablespoon

Instructions

  1. Preheat Your Equipment: Set your oven to 350°F (175°C). Lightly grease or line an 8×8-inch baking dish with parchment paper.
  2. Combine Ingredients: In a large bowl, whisk the eggs and milk. Stir in flour, baking powder, salt, and pepper until smooth.
  3. Prepare Your Cooking Vessel: Add the spinach, onion, and both cheeses into the batter. Fold until well combined.
  4. Assemble the Dish: Pour the mixture evenly into the prepared baking dish. Smooth the top with a spatula.
  5. Cook to Perfection: Bake for 35–40 minutes, or until the top is golden and a toothpick comes out clean from the center.
  6. Finishing Touches: Let cool in the pan for 10 minutes. Then lift out and slice into squares.
  7. Serve and Enjoy: Serve warm or at room temperature. Garnish with a sprinkle of extra cheese or herbs if desired.

Notes

  • Drain spinach thoroughly to avoid soggy texture.
  • Grate your own cheese for best flavor and melt.
  • Add fresh herbs for a flavor boost.
  • Store in fridge or freeze for easy reheating.
