Description

A rich and moist sticky ginger loaf cake made with warming spices, deep molasses, and brown sugar, baked to perfection with a tender crumb and glossy finish. Perfect for tea time or a cozy dessert.

  • 2 large eggs
  • 1 cup milk

Instructions

  1. Preheat oven to 350°F and grease a 9 by 5 inch loaf pan.
  2. In a mixing bowl, whisk together flour, baking soda, ground ginger, cinnamon, and salt.
  3. In a separate bowl, combine melted butter and brown sugar until smooth. Stir in molasses, eggs, milk, and vanilla extract until fully blended.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top evenly.
  6. Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the loaf to cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.
