Description
A classic, sweet, and refreshing strawberry pie made with fresh strawberries, a simple gelatin glaze, and a crisp pre-baked crust. Perfect for spring and summer gatherings.

- 1 pre-baked 9-inch pie crust
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 1 cup water
- 1 (3 oz) package strawberry gelatin
- 4 cups fresh strawberries, hulled and halved
Instructions
- In a medium saucepan, combine the sugar and cornstarch. Gradually whisk in the water until smooth.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil, about 5–7 minutes.
- Remove from heat and stir in the strawberry gelatin until fully dissolved. Allow the mixture to cool slightly, about 10–15 minutes.
- Arrange the hulled and halved strawberries evenly in the pre-baked pie crust.
- Pour the slightly cooled gelatin mixture over the strawberries, making sure all berries are coated.
- Refrigerate the pie for at least 4 hours, or until fully set.
- Slice and serve chilled, optionally topped with whipped cream.
Notes
- For best flavor, use fresh, ripe strawberries.
- If desired, brush the pie crust with a thin layer of melted chocolate before adding strawberries to prevent sogginess.
- This pie is best enjoyed within 2 days for optimal freshness.
