1 pre-baked 9-inch pie crust
1 cup granulated sugar
3 tablespoons cornstarch
1 cup water
1 (3 oz) package strawberry gelatin
4 cups fresh strawberries, hulled and halved
Instructions
In a medium saucepan, combine the sugar and cornstarch. Gradually whisk in the water until smooth.
Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil, about 5–7 minutes.
Remove from heat and stir in the strawberry gelatin until fully dissolved. Allow the mixture to cool slightly, about 10–15 minutes.
Arrange the hulled and halved strawberries evenly in the pre-baked pie crust.
Pour the slightly cooled gelatin mixture over the strawberries, making sure all berries are coated.
Refrigerate the pie for at least 4 hours, or until fully set.
Slice and serve chilled, optionally topped with whipped cream.
Notes
For best flavor, use fresh, ripe strawberries.
If desired, brush the pie crust with a thin layer of melted chocolate before adding strawberries to prevent sogginess.
