This Strawberry Tiramisu features fresh, macerated strawberries and a creamy mascarpone filling, layered with delicate ladyfingers and topped with whipped cream. Ingredients
For the Strawberry Layer:
• 2 cups fresh strawberries, hulled and diced
• ¼ cup sugar
For the Filling:
• 3 large egg yolks
• ½ cup sugar
• 8 oz mascarpone cheese, softened
• 1 cup heavy whipping cream, cold
• 1 package ladyfingers
For the Whipped Cream Topping:
• 1 cup heavy whipping cream, cold
• ¼ cup powdered sugar
• 1 tsp vanilla extract
• Strawberries, for decorating

Prepare the Strawberry Layer:
- In a bowl, combine diced strawberries with ¼ cup sugar.
- Let sit for 10-15 minutes to release juices.

Make the Mascarpone Filling:
- In a heatproof bowl, whisk egg yolks and ½ cup sugar over a simmering pot of water (double boiler method).
- Whisk constantly until the mixture is thick and pale (about 5 minutes), then let cool slightly.
- Beat in mascarpone cheese until smooth.
- In a separate bowl, whip heavy whipping cream until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture.

Assemble the Tiramisu:
- Dip ladyfingers lightly into the strawberry juices (do not soak).
- Layer half of the soaked ladyfingers in a serving dish or a 9×9-inch pan.
- Spread half of the mascarpone filling over the ladyfingers.
- Sprinkle half of the macerated strawberries over the mascarpone.
- Repeat layers with remaining ladyfingers, mascarpone mixture, and strawberries.

Make the Whipped Cream Topping:
- Beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
- Spread or pipe over the tiramisu.

Chill & Serve:
- Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
- Garnish with fresh strawberries before serving.

- This tiramisu can be made a day ahead of time to allow the flavors to develop and meld together.
