Celebrate Valentine’s Day with a refreshing twist on the classic tiramisu! This Strawberry Tiramisu features fresh, macerated strawberries and a creamy mascarpone filling, layered with delicate ladyfingers and topped with whipped cream. A light yet indulgent dessert, perfect for any romantic occasion.

Ingredients

For the Strawberry Layer:
• 2 cups fresh strawberries, hulled and diced
• ¼ cup sugar

For the Filling:
• 3 large egg yolks
• ½ cup sugar
• 8 oz mascarpone cheese, softened
• 1 cup heavy whipping cream, cold
• 1 package ladyfingers

For the Whipped Cream Topping:
• 1 cup heavy whipping cream, cold
• ¼ cup powdered sugar
• 1 tsp vanilla extract
• Strawberries, for decorating

Instructions

  • Prepare the Strawberry Layer:
    • In a bowl, combine diced strawberries with ¼ cup sugar.
    • Let sit for 10-15 minutes to release juices.
  • Make the Mascarpone Filling:
    • In a heatproof bowl, whisk egg yolks and ½ cup sugar over a simmering pot of water (double boiler method).
    • Whisk constantly until the mixture is thick and pale (about 5 minutes), then let cool slightly.
    • Beat in mascarpone cheese until smooth.
    • In a separate bowl, whip heavy whipping cream until stiff peaks form.
    • Gently fold the whipped cream into the mascarpone mixture.
  • Assemble the Tiramisu:
    • Dip ladyfingers lightly into the strawberry juices (do not soak).
    • Layer half of the soaked ladyfingers in a serving dish or a 9×9-inch pan.
    • Spread half of the mascarpone filling over the ladyfingers.
    • Sprinkle half of the macerated strawberries over the mascarpone.
    • Repeat layers with remaining ladyfingers, mascarpone mixture, and strawberries.
  • Make the Whipped Cream Topping:
    • Beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
    • Spread or pipe over the tiramisu.
  • Chill & Serve:
    • Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
    • Garnish with fresh strawberries before serving.

Notes

  • This tiramisu can be made a day ahead of time to allow the flavors to develop and meld together.
  • Adjust the amount of sugar in the strawberry layer according to the sweetness of the berries.
  • You can garnish with mint leaves or chocolate shavings for added flair.
