Instructions
- Preheat oven to 350°F (175°C) and grease or line a 12-cup muffin tin.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl or blender, combine cottage cheese, eggs, milk, vanilla, honey, and oil until smooth.
- Gradually add the dry ingredients to the wet, stirring until just combined. Avoid overmixing.
- Fold in diced strawberries with a spatula.
- Divide the batter evenly among muffin cups.
- Bake for 18–20 minutes, until golden and a toothpick comes out clean.
- Cool for 5 minutes before removing, then serve warm or store.
