  • 1 cup fresh strawberries, diced

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a 12-cup muffin tin.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl or blender, combine cottage cheese, eggs, milk, vanilla, honey, and oil until smooth.
  4. Gradually add the dry ingredients to the wet, stirring until just combined. Avoid overmixing.
  5. Fold in diced strawberries with a spatula.
  6. Divide the batter evenly among muffin cups.
  7. Bake for 18–20 minutes, until golden and a toothpick comes out clean.
  8. Cool for 5 minutes before removing, then serve warm or store.
