Description

A warm, comforting bowl of sweet couscous soaked in creamy milk, dotted with chopped dates, and gently spiced with cinnamon. This North African-inspired dish is perfect for breakfast or dessert and comes together in just 15 minutes.


Ingredients

  • 1 cup fine couscous
  • 2 cups whole milk
  • 1/2 cup pitted dates, finely chopped
  • 12 tablespoons sugar or honey
  • 1 tablespoon butter
  • Pinch of salt
  • 1/2 teaspoon cinnamon (optional)
  • 2 tablespoons slivered almonds or crushed pistachios (optional)


Instructions

  1. Warm the milk in a saucepan over low heat until steaming.
  2. Place couscous in a heatproof bowl. Pour 1 cup of the hot milk over it, cover, and let it sit for 5–7 minutes.
  3. Meanwhile, add the chopped dates, butter, and sweetener to the remaining hot milk and keep it on low heat.
  4. Fluff the couscous with a fork and add it to the saucepan with the milk and date mixture.
  5. Stir gently and let it warm through for 2–3 minutes until creamy.
  6. Add a pinch of salt and cinnamon if using, and stir in optional nuts.
  7. Serve warm with extra milk or a drizzle of honey if desired.

Notes

  • Use Medjool dates for the softest, sweetest texture.
  • For a vegan version, swap in plant-based milk and butter.
  • Reheat leftovers with a splash of milk for a next-day treat.
  • Add orange blossom water for a traditional floral touch.
