Ingredients
Scale
- 1 cup fine couscous
- 2 cups whole milk
- 1/2 cup pitted dates, finely chopped
- 1–2 tablespoons sugar or honey
- 1 tablespoon butter
- Pinch of salt
- 1/2 teaspoon cinnamon (optional)
- 2 tablespoons slivered almonds or crushed pistachios (optional)
Instructions
- Warm the milk in a saucepan over low heat until steaming.
- Place couscous in a heatproof bowl. Pour 1 cup of the hot milk over it, cover, and let it sit for 5–7 minutes.
- Meanwhile, add the chopped dates, butter, and sweetener to the remaining hot milk and keep it on low heat.
- Fluff the couscous with a fork and add it to the saucepan with the milk and date mixture.
- Stir gently and let it warm through for 2–3 minutes until creamy.
- Add a pinch of salt and cinnamon if using, and stir in optional nuts.
- Serve warm with extra milk or a drizzle of honey if desired.
Notes
- Use Medjool dates for the softest, sweetest texture.
- For a vegan version, swap in plant-based milk and butter.
- Reheat leftovers with a splash of milk for a next-day treat.
- Add orange blossom water for a traditional floral touch.
