Ingredients

Scale

For the Brownie Cookie Dough:

  • 1/2 cup (1 stick) unsalted butter
  • 1 1/4 cups semi-sweet chocolate chips
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt

For the Peanut Butter Swirl:

  • 1/2 cup creamy peanut butter
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  • Preheat the Oven:
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • Melt Chocolate and Butter:
In a microwave-safe bowl, melt the butter and chocolate chips together in 30-second increments, stirring after each, until smooth. Set aside to cool slightly.
  • Mix Wet Ingredients:
In a large mixing bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract until smooth and fluffy. Stir in the melted chocolate mixture.
  • Combine Dry Ingredients:
In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.
  • Prepare the Peanut Butter Swirl:
In a small bowl, mix peanut butter, powdered sugar, and vanilla extract until smooth.
  • Form and Swirl the Cookies:
Scoop about 1 1/2 tablespoons of brownie dough onto the prepared baking sheets, spacing them 2 inches apart. Drop a small dollop of the peanut butter mixture onto the center of each cookie. Use a toothpick or the tip of a knife to swirl the peanut butter into the brownie dough, creating a marbled effect.
  • Bake the Cookies:
Bake in the preheated oven for 10–12 minutes, or until the edges are set but the centers are slightly soft. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Storage: Store the cookies in an airtight container at room temperature for up to 5 days.
  • Freezing: You can freeze the cookie dough balls before baking and bake them directly from the freezer. Just add a minute or two to the baking time.
  • Peanut Butter Options: For a different flavor, try crunchy peanut butter for more texture.
