Description
Tajine Sardi is a traditional Moroccan fish stew made with fresh sardines, vibrant vegetables, and warming spices. Slowly cooked in a tajine, it’s rich, aromatic, and full of Mediterranean flavor.

- 8 whole sardines, cleaned and butterflied
- 2 medium potatoes, peeled and sliced into rounds
- 2 large carrots, peeled and cut into sticks
- 1 medium yellow squash, sliced
- 1 handful fresh parsley, finely chopped
- 1 handful fresh cilantro, finely chopped
- 4 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground turmeric
- 3 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- 1/2 cup water or fish broth
Instructions
- Preheat the tajine over low heat or a heavy-lidded skillet on the stove.
- In a mixing bowl, combine olive oil, cumin, paprika, turmeric, garlic, lemon juice, salt, and pepper. Mix well.
- Toss sardines and vegetables in the spice marinade.
- Layer potatoes at the bottom of the tajine, followed by carrots and squash.
- Place sardines on top of the vegetables. Pour any remaining marinade over everything.
- Add water or broth gently to the side of the pot.
- Cover and simmer on low heat for 45 to 50 minutes until everything is tender.
- Garnish with fresh parsley and cilantro before serving.
Notes
- Let sardines marinate for 20 minutes for deeper flavor.
- Use fresh herbs for best taste, but dried can work in a pinch.
- Serve with warm bread or fluffy couscous.
- Add a slice of preserved lemon for a tangy twist.
