- 1.5 to 2 lbs salmon fillet (skin-on or off)
- 2 tablespoons fresh dill, chopped
- 2 cloves garlic, minced
- Zest and juice of 1 lemon
- 1 tablespoon Dijon mustard
- 2 tablespoons olive oil
- 1/3 cup panko breadcrumbs
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 teaspoon honey
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine dill, garlic, lemon zest and juice, mustard, olive oil, honey, breadcrumbs, salt, pepper, and paprika.
- Place salmon on the baking sheet, pat dry, and press the breadcrumb mixture evenly over the top.
- Bake for 12–15 minutes, until salmon flakes easily and topping is golden. Let rest for 2–3 minutes before serving.
Notes
- Use panko for extra crunch or swap for gluten-free breadcrumbs.
- Fresh dill adds the best flavor, but parsley or chives also work well.
- Check doneness with a fork or thermometer (125–130°F).
