- 1 pound flank steak
- 6 medium flour tortillas
- 2 cups shredded cheddar cheese
- 1 large bell pepper, sliced
- 1 medium yellow onion, sliced
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons cooking oil
- 1 fresh lime
Instructions
- Heat a large skillet over medium-high heat.
- Season sliced flank steak with garlic powder, paprika, salt, and black pepper.
- Add cooking oil to the skillet and sauté onions and bell peppers for about 6 minutes until softened.
- Remove vegetables and cook steak for 2 to 3 minutes per side until browned and fully cooked.
- Return vegetables to the skillet and stir together with the steak.
- Fill tortillas with steak mixture and shredded cheddar cheese.
- Fold tortillas and cook briefly in the skillet until lightly crisp and cheese melts.
- Top with sour cream and fresh lime juice before serving.
- Serve immediately while warm and cheesy.
