This moist and tangy Lemon Loaf is bursting with bright lemon flavor. Topped with a sweet and zesty lemon glaze, it makes for the perfect treat with a cup of tea or as a sweet snack any time of day!

For the Lemon Loaf:

  • 1⅓ cups flour
  • 1¾ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup butter, softened
  • ⅔ cup sugar
  • 3 eggs
  • 1 cup sour cream
  • 1½ tablespoons lemon zest (roughly the amount you get from one lemon)
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon extract (not lemon oil!)

For the Lemon Glaze:

  • 1 cup powdered sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon milk
  • 1 tablespoon butter, melted

Instructions

  • Preheat the Oven:
    Preheat the oven to 325ºF (165ºC).
  • Prepare Dry Ingredients:
    Stir together the flour, baking powder, and salt in a bowl and set aside.
  • Cream Butter and Sugar:
    Cream the butter and sugar together until light and fluffy.
  • Add Wet Ingredients:
    Beat in the eggs, sour cream, lemon zest, lemon juice, and lemon extract.
  • Combine:
    Add the flour mixture to the wet ingredients and stir until completely combined.
  • Bake:
    Pour the batter into a greased 4×8 or 5×9 inch loaf pan. Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool:
    Remove from the oven and let the loaf rest for 10 minutes.
    Loosen the edges of the loaf from the pan with a butter or icing knife, then turn the loaf onto a wire rack to cool completely.
  • Make the Glaze:
    Combine the glaze ingredients (powdered sugar, lemon juice, milk, and melted butter) until smooth.
  • Glaze and Serve:
    Drizzle the glaze over the cooled lemon loaf and spread it with the back of a spoon. Slice and serve!

Notes

  • Make sure the loaf is completely cooled before adding the glaze to prevent it from melting.
  • For a more intense lemon flavor, you can increase the amount of lemon juice or zest.
