  • 5 egg yolks
  • ⅔ cup white sugar
  • ⅓ cup heavy cream
  • 16 ounces (2 cups) mascarpone cheese

  • Coffee Soaked Ladyfingers:
  • 14 ounces (2 packs) ladyfingers
  • 1 ½ cups cold espresso
  • 3 tablespoons brown sugar
  • Top with:
  • Coffee powder or cocoa powder

Instructions

  1. Prepare the Mascarpone Filling: In a medium bowl, whisk together egg yolks and sugar with a hand mixer on medium-high speed until thick and pale yellow. In a separate bowl, whip heavy cream with vanilla until stiff peaks form. Gently fold mascarpone cheese into the egg mixture until smooth, then fold in the whipped cream carefully to keep the mixture fluffy.
  2. Prepare the Ladyfingers: In a shallow bowl, mix cold espresso with brown sugar until dissolved. Briefly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
  3. Assemble the Cups: Layer the coffee-soaked ladyfingers at the bottom of serving cups. Spoon a layer of mascarpone cream over the ladyfingers and spread evenly. Repeat layering with more soaked ladyfingers and cream, finishing with a final layer of cream.
  4. Chill and Serve: Cover cups with plastic wrap and refrigerate for 6–8 hours or overnight to set. Before serving, dust the tops with coffee or cocoa powder and garnish with grated chocolate if desired. Serve chilled and enjoy.

  • Use strong espresso for the best flavor.
  • Do not oversoak the ladyfingers to avoid a mushy texture.
  • Refrigerating overnight allows the flavors to meld beautifully.
