Description
Tofu Cabbage Stir Fry is a quick, flavorful vegan dish made with crumbled tofu, tender cabbage, scallions, and a savory soy-based sauce. It’s a healthy, satisfying weeknight meal that’s easy to customize.

- 1 tbsp light (regular) soy sauce
- 1 tbsp dark soy sauce (or use an extra tbsp regular soy sauce)
- 1 tbsp rice wine vinegar
- 2 tsp maple syrup or sugar
- 1/2 tbsp sesame oil
- 1/2 tsp vegetable bouillon paste or 1/2 a crushed vegetable bouillon cube
- 1-2 tbsp avocado oil
- 4 scallions, sliced (whites and greens separated)
- 1 red chili pepper, sliced (optional)
- 4 cloves garlic, crushed or grated
- 1/2 inch ginger, grated or minced
- 1 (450g) block super firm or extra firm tofu, pressed and drained
- 1 tsp smoked paprika
- 1/2 tsp ground coriander
- 2 cups green cabbage, shredded
Instructions
- In a small bowl, combine light soy sauce, dark soy sauce, rice wine vinegar, maple syrup, sesame oil, and vegetable bouillon. Whisk together and set aside.
- Heat a large skillet over medium-high heat and add avocado oil. Sauté the white parts of the scallions and chili pepper (if using) until the scallions start to soften.
- Add garlic and ginger, sautéing for about 1 minute until fragrant.
- Crumble the tofu into the pan. Add smoked paprika and coriander. If needed, add more oil. Sauté the tofu for 3-5 minutes until coated in spices and heated through.
- Add the shredded cabbage and stir fry for about 4 minutes, until it starts to soften.
- Pour in the prepared sauce and toss everything together. Continue to cook until the tofu and vegetables have absorbed the sauce and are evenly coated.
- Serve hot, garnished with extra scallion greens if desired. Enjoy with rice or noodles.
Notes
- Press tofu well for best texture and to absorb flavors.
- Use tamari for a gluten-free version.
- Spice level can be adjusted by omitting or adding more chili pepper.
- This dish is great for meal prep—store in an airtight container for up to 3 days.
