Tofu Cabbage Stir Fry is a quick, flavorful vegan dish made with crumbled tofu, tender cabbage, scallions, and a savory soy-based sauce. It’s a healthy, satisfying weeknight meal that’s easy to customize.

Ingredients

  • 1 tbsp light (regular) soy sauce
  • 1 tbsp dark soy sauce (or use an extra tbsp regular soy sauce)
  • 1 tbsp rice wine vinegar
  • 2 tsp maple syrup or sugar
  • 1/2 tbsp sesame oil
  • 1/2 tsp vegetable bouillon paste or 1/2 a crushed vegetable bouillon cube
  • 12 tbsp avocado oil
  • 4 scallions, sliced (whites and greens separated)
  • 1 red chili pepper, sliced (optional)
  • 4 cloves garlic, crushed or grated
  • 1/2 inch ginger, grated or minced
  • 1 (450g) block super firm or extra firm tofu, pressed and drained
  • 1 tsp smoked paprika
  • 1/2 tsp ground coriander
  • 2 cups green cabbage, shredded

Instructions

  1. In a small bowl, combine light soy sauce, dark soy sauce, rice wine vinegar, maple syrup, sesame oil, and vegetable bouillon. Whisk together and set aside.
  2. Heat a large skillet over medium-high heat and add avocado oil. Sauté the white parts of the scallions and chili pepper (if using) until the scallions start to soften.
  3. Add garlic and ginger, sautéing for about 1 minute until fragrant.
  4. Crumble the tofu into the pan. Add smoked paprika and coriander. If needed, add more oil. Sauté the tofu for 3-5 minutes until coated in spices and heated through.
  5. Add the shredded cabbage and stir fry for about 4 minutes, until it starts to soften.
  6. Pour in the prepared sauce and toss everything together. Continue to cook until the tofu and vegetables have absorbed the sauce and are evenly coated.
  7. Serve hot, garnished with extra scallion greens if desired. Enjoy with rice or noodles.

Notes

  • Press tofu well for best texture and to absorb flavors.
  • Use tamari for a gluten-free version.
  • Spice level can be adjusted by omitting or adding more chili pepper.
  • This dish is great for meal prep—store in an airtight container for up to 3 days.
