Ingredients

  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups vegetable broth
  • 1 cup cooked white rice
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 teaspoon sugar
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté chopped onion for 3–4 minutes until translucent, then add garlic and cook for another minute.
  3. Pour in crushed tomatoes and vegetable broth.
  4. Stir in dried basil, salt, pepper, and sugar.
  5. Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes.
  6. Stir in the cooked rice and heat through for another 5 minutes.
  7. Adjust seasoning if needed, then serve hot with fresh parsley garnish.
