Ingredients

- 20 oz cheese tortellini (fresh or refrigerated)
- 1 lb Italian sausage, casings removed
- 3 cups kale, chopped and stems removed
- 1 cup heavy cream
- 4 tbsp butter
- 3 cloves garlic, minced
- 1 cup Parmesan cheese, freshly grated
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1/4 tsp red pepper flakes (optional)
Instructions
- Bring a large pot of salted water to boil and cook tortellini according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil and cook sausage until browned and cooked through. Remove and set aside.
- In the same skillet, melt butter and sauté garlic until fragrant.
- Stir in heavy cream and bring to a gentle simmer. Add Parmesan cheese and stir until smooth and creamy.
- Add kale and cook until slightly wilted.
- Return sausage to the skillet, then add cooked tortellini. Toss until well coated in the sauce.
- Season with salt, pepper, and red pepper flakes if desired. Serve hot, garnished with extra Parmesan.
Notes
- Reserve a little pasta water to loosen the sauce if needed.
- Use freshly grated Parmesan for the smoothest sauce.
- Add a squeeze of lemon juice before serving for brightness.
