Description

Tortellini, Sausage and Kale Mixed in a Creamy Alfredo Sauce is a comforting and indulgent pasta dish. Cheesy tortellini, savory sausage, and earthy kale are tossed in a rich Alfredo sauce for the perfect weeknight dinner or special occasion meal.


Ingredients

Scale
  • 20 oz cheese tortellini (fresh or refrigerated)
  • 1 lb Italian sausage, casings removed
  • 3 cups kale, chopped and stems removed
  • 1 cup heavy cream
  • 4 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup Parmesan cheese, freshly grated
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1/4 tsp red pepper flakes (optional)


Instructions

  1. Bring a large pot of salted water to boil and cook tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil and cook sausage until browned and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and sauté garlic until fragrant.
  4. Stir in heavy cream and bring to a gentle simmer. Add Parmesan cheese and stir until smooth and creamy.
  5. Add kale and cook until slightly wilted.
  6. Return sausage to the skillet, then add cooked tortellini. Toss until well coated in the sauce.
  7. Season with salt, pepper, and red pepper flakes if desired. Serve hot, garnished with extra Parmesan.

Notes

  • Reserve a little pasta water to loosen the sauce if needed.
  • Use freshly grated Parmesan for the smoothest sauce.
  • Add a squeeze of lemon juice before serving for brightness.
