Ingredients

  • Fresh Cod Fillets: 4 pieces (about 6 oz each)
  • All-Purpose Flour: 1 cup
  • Cornstarch: ½ cup
  • Baking Powder: 1 teaspoon
  • Cold Sparkling Water: 1 cup
  • Salt: 1 teaspoon
  • Black Pepper: ½ teaspoon
  • Paprika: 1 teaspoon
  • Large Sweet Onion: 1, sliced into ½-inch rings
  • Buttermilk: ½ cup
  • Additional Flour: 1 cup (for dredging)
  • Oil for Frying: Enough for deep frying (canola or vegetable)

Instructions

  1. Preheat Your Equipment: Heat oil to 350°F (175°C). Line a baking sheet with a wire rack for draining.
  2. Combine Ingredients: Whisk flour, cornstarch, baking powder, salt, pepper, and paprika. Add cold sparkling water and mix until smooth. Chill batter.
  3. Prepare Your Cooking Vessel: Pat cod dry and coat lightly in flour. Soak onion rings in buttermilk for 10 minutes, then dredge in flour.
