- 2 cups long grain rice, rinsed and drained
- 1 pound ground lamb
- 1 large onion, finely chopped
- 1 medium carrot, diced small
- 3 cloves garlic, minced
- 3 cups chicken or vegetable broth, warm
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon ground cumin
- 1/2 teaspoon ground allspice
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 1/4 cup pine nuts, lightly toasted
- 1/4 cup fresh parsley, chopped
Instructions
- Place a large heavy bottomed pot over medium heat.
- Add olive oil and butter. Once melted, add chopped onion and cook until soft and lightly golden. Stir in garlic and diced carrot and cook for 2 minutes.
- Add ground lamb and cook until browned, breaking it apart with a spoon. Stir in cumin, allspice, salt, and black pepper.
- Add rinsed rice and stir gently to coat the grains. Toast for about 2 minutes.
- Pour in warm broth and bring to a gentle simmer. Cover, reduce heat to low, and cook for 15 to 18 minutes until liquid is absorbed and rice is tender.
- Remove from heat and let sit covered for 5 minutes. Fluff gently with a fork.
- Stir in toasted pine nuts and chopped parsley, then serve warm.

- Rinse rice thoroughly to keep grains separate and fluffy.
- Avoid stirring too much once broth is added to prevent mushy texture.
- Reheat with a splash of broth to restore moisture.
