These twisted paneer samosas are a modern take on a classic Indian snack, with a crisp golden crust and a spiced paneer filling that’s irresistible. Perfect for parties or tea-time cravings.

- 1 cup paneer, crumbled
- 1 green chili, finely chopped
- 2 tablespoons coriander leaves, chopped
- 1/2 teaspoon garam masala
- 1/2 teaspoon cumin seeds
- Salt to taste
- 1 cup wheat flour
- 2 tablespoons semolina (sooji)
- 2 tablespoons oil (plus more for frying)
- Water, as needed
Instructions
- Heat oil in a deep frying pan on medium heat and set aside for later.
- In a bowl, combine crumbled paneer, green chili, coriander, garam masala, cumin, and salt. Mix well.
- In a separate bowl, mix wheat flour, semolina, salt, and oil. Gradually add water and knead into a firm dough. Let it rest for 15 minutes.
- Divide the dough into small balls and roll each one into thin ovals. Cut into strips.
- Place a spoonful of filling at one end of each strip, twist and roll into a spiral shape, sealing the ends tightly.
- Fry the twisted samosas in batches until golden brown. Alternatively, brush with oil and bake at 375°F for 20-25 minutes.
- Allow to cool slightly before serving with chutney or dip of choice.
Notes
- Let dough rest before rolling for better texture.
- Use soft paneer for creamier filling.
- For extra crispness, add a pinch of baking soda to the dough.
- To freeze, shape the samosas and store in airtight container. Fry or bake directly from frozen.
