Description

These twisted paneer samosas are a modern take on a classic Indian snack, with a crisp golden crust and a spiced paneer filling that’s irresistible. Perfect for parties or tea-time cravings.


Ingredients

  • 1 cup paneer, crumbled
  • 1 green chili, finely chopped
  • 2 tablespoons coriander leaves, chopped
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon cumin seeds
  • Salt to taste
  • 1 cup wheat flour
  • 2 tablespoons semolina (sooji)
  • 2 tablespoons oil (plus more for frying)
  • Water, as needed


Instructions

  1. Heat oil in a deep frying pan on medium heat and set aside for later.
  2. In a bowl, combine crumbled paneer, green chili, coriander, garam masala, cumin, and salt. Mix well.
  3. In a separate bowl, mix wheat flour, semolina, salt, and oil. Gradually add water and knead into a firm dough. Let it rest for 15 minutes.
  4. Divide the dough into small balls and roll each one into thin ovals. Cut into strips.
  5. Place a spoonful of filling at one end of each strip, twist and roll into a spiral shape, sealing the ends tightly.
  6. Fry the twisted samosas in batches until golden brown. Alternatively, brush with oil and bake at 375°F for 20-25 minutes.
  7. Allow to cool slightly before serving with chutney or dip of choice.

Notes

  • Let dough rest before rolling for better texture.
  • Use soft paneer for creamier filling.
  • For extra crispness, add a pinch of baking soda to the dough.
  • To freeze, shape the samosas and store in airtight container. Fry or bake directly from frozen.
