These heart-shaped coconut macaroons are a perfect Valentine’s Day treat! Soft, chewy coconut bites drizzled with sweet white chocolate make for a festive, delicious snack that’s sure to win hearts.

  • 1 cup granulated sugar
  • 1/4 cup light corn syrup
  • 1/4 tsp salt
  • 3 cups sweetened shredded coconut
  • 2 large egg whites (room temperature)
  • 1 tsp vanilla extract
  • White chocolate (for drizzling)
  • Colored sprinkles (optional)

Instructions

Prepare the Coconut Mixture:

  1. Preheat the Oven: Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. Make the Coconut Mixture: In a medium saucepan, combine the water, granulated sugar, light corn syrup, and salt. Heat over medium, stirring occasionally until the sugar dissolves.
  3. Combine with Coconut: Add the shredded coconut to the mixture and stir until evenly combined. Set aside to cool slightly.

Whisk the Egg Whites:

  1. Beat the Egg Whites: In a separate bowl, beat the egg whites with a hand mixer or stand mixer on medium-high speed until soft peaks form. Add the vanilla extract and continue to beat until stiff peaks form.

Combine the Mixtures:

  1. Fold Together: Gently fold the cooled coconut mixture into the beaten egg whites until well combined, being careful not to deflate the egg whites.

Shape the Macaroons:

  1. Scoop the Mixture: Use a cookie scoop to scoop out mounds of the coconut mixture and place them on the prepared baking sheet.
  2. Shape the Macaroons: For heart-shaped macaroons, gently place a heart-shaped cookie cutter over each mound and press it slightly to form the shape. Carefully remove the cutter.

Bake the Macaroons:

  1. Bake: Bake the macaroons for 15-18 minutes, or until the edges are golden brown and the centers are set.
  2. Cool: Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Drizzle with White Chocolate:

  1. Melt the Chocolate: Once the macaroons are cooled, melt the white chocolate in the microwave in 30-second intervals, stirring between each.
  2. Drizzle the Chocolate: Drizzle the melted white chocolate over the macaroons using a spoon or fork.

Add Sprinkles:
