This decadent Valentine’s S’mores Brownie Pie combines a buttery graham cracker crust with a rich brownie filling and a fluffy, toasted meringue topping. It’s a perfect sweet treat for any romantic occasion, delivering all the flavors of s’mores with a twist!

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted

For the Brownie Filling:

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup semi-sweet chocolate chips

For the Meringue Topping:

  • 3 large egg whites
  • 1/2 cup granulated sugar
  • 1/4 tsp cream of tartar
  • 1/2 tsp pure vanilla extract

Instructions

  • Prepare the Crust:
    • Preheat the oven to 350°F (175°C).
    • In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until evenly combined.
    • Press the mixture firmly into a heart-shaped pan, covering the bottom and slightly up the sides.
    • Bake for 8 minutes, then set aside to cool.
  • Make the Brownie Filling:
    • In a large bowl, whisk together melted butter and sugar until smooth.
    • Add eggs and vanilla, mixing until combined.
    • Sift in cocoa powder, flour, salt, and baking powder, stirring just until incorporated.
    • Fold in chocolate chips.
    • Pour the batter over the cooled crust and smooth the top.
  • Bake the Pie:
    • Bake for 25-30 minutes, or until the center is set and a toothpick inserted comes out with moist crumbs.
    • Let cool slightly while preparing the meringue topping.
  • Make the Meringue Topping:
    • In a heatproof bowl, whisk together egg whites, sugar, and cream of tartar.
    • Place over a pot of simmering water (double boiler method) and whisk constantly until the sugar dissolves (about 3-4 minutes).
    • Remove from heat and beat with an electric mixer on high speed until stiff peaks form, then mix in vanilla extract.
  • Assemble & Finish:
    • Spread or pipe the meringue over the warm brownie layer.
    • Use a kitchen torch to lightly toast the meringue until golden, or broil for 1-2 minutes, watching closely.
  • Serve:

Notes
