- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
For the Brownie Filling:
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/2 cup semi-sweet chocolate chips
For the Meringue Topping:
- 3 large egg whites
- 1/2 cup granulated sugar
- 1/4 tsp cream of tartar
- 1/2 tsp pure vanilla extract
Instructions
-
Prepare the Crust:
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until evenly combined.
- Press the mixture firmly into a heart-shaped pan, covering the bottom and slightly up the sides.
- Bake for 8 minutes, then set aside to cool.
-
Make the Brownie Filling:
- In a large bowl, whisk together melted butter and sugar until smooth.
- Add eggs and vanilla, mixing until combined.
- Sift in cocoa powder, flour, salt, and baking powder, stirring just until incorporated.
- Fold in chocolate chips.
- Pour the batter over the cooled crust and smooth the top.
-
Bake the Pie:
- Bake for 25-30 minutes, or until the center is set and a toothpick inserted comes out with moist crumbs.
- Let cool slightly while preparing the meringue topping.
-
Make the Meringue Topping:
- In a heatproof bowl, whisk together egg whites, sugar, and cream of tartar.
- Place over a pot of simmering water (double boiler method) and whisk constantly until the sugar dissolves (about 3-4 minutes).
- Remove from heat and beat with an electric mixer on high speed until stiff peaks form, then mix in vanilla extract.
-
Assemble & Finish:
- Spread or pipe the meringue over the warm brownie layer.
- Use a kitchen torch to lightly toast the meringue until golden, or broil for 1-2 minutes, watching closely.
-
Serve:
- Slice and serve your Valentine’s S’mores Brownie Pie warm or at room temperature. Enjoy the sweet, gooey, and toasty treat!
Notes
- For added flavor, you can sprinkle mini marshmallows over the meringue before toasting for a more traditional s’mores look.
- If you don’t have a kitchen torch, broiling the meringue in the oven works great, just be sure to keep an eye on it to prevent burning.
