These soft and chewy Valentine’s Sugar Cookie Cake Bars are topped with a creamy, colorful frosting and decorated with sprinkles, making them perfect for any Valentine’s celebration!

For the Cookie Bars:

  • 2 sticks unsalted butter (room temperature)
  • 2 cups sugar
  • 4 large eggs
  • 5 cups flour
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • ½ teaspoon baking soda

For the Frosting:

  • 2 sticks unsalted butter (room temperature)
  • 4 cups powdered sugar
  • 4 tablespoons milk
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 57 drops red gel food coloring
  • Nonpareils for decorating

Instructions

For the Cookie Bars:

  1. Preheat oven to 375ºF.
  2. In a large bowl, cream together the butter and sugar.
  3. Mix in one egg at a time.
  4. Add vanilla extract and mix well.
  5. In a separate bowl, mix together the flour, salt, and baking soda.
  6. Gradually add the dry ingredients to the wet ingredients. Mix well.
  7. Flour your hands to prevent the dough from sticking and spread it on a prepared jelly roll pan.
  8. Bake for 12-15 minutes (do not over-bake as it may dry out the bars).

For the Frosting:

  1. Beat the butter until creamy.
  2. Mix in vanilla extract and salt.
  3. Gradually add powdered sugar, mixing well.
  4. Add the milk and mix until desired consistency is reached.
  5. Squeeze red food coloring into the frosting until it reaches your desired pink hue.
  6. Spread the frosting over the cooled cookie bars.
  7. Sprinkle nonpareils for decoration.

Notes

  • When the bars are done, a toothpick inserted should come out clean.
  • Use room temperature eggs and butter for best results.
  • Store in an airtight container at room temperature for up to 5 days.
