These soft and chewy Valentine’s Sugar Cookie Cake Bars are topped with a creamy, colorful frosting and decorated with sprinkles, making them perfect for any Valentine’s celebration!

For the Cookie Bars:
- 2 sticks unsalted butter (room temperature)
- 2 cups sugar
- 4 large eggs
- 5 cups flour
- 2 teaspoons vanilla extract
- 1 teaspoon salt
- ½ teaspoon baking soda
For the Frosting:
- 2 sticks unsalted butter (room temperature)
- 4 cups powdered sugar
- 4 tablespoons milk
- 1 teaspoon vanilla extract
- Pinch of salt
- 5-7 drops red gel food coloring
- Nonpareils for decorating
Instructions
For the Cookie Bars:
- Preheat oven to 375ºF.
- In a large bowl, cream together the butter and sugar.
- Mix in one egg at a time.
- Add vanilla extract and mix well.
- In a separate bowl, mix together the flour, salt, and baking soda.
- Gradually add the dry ingredients to the wet ingredients. Mix well.
- Flour your hands to prevent the dough from sticking and spread it on a prepared jelly roll pan.
- Bake for 12-15 minutes (do not over-bake as it may dry out the bars).
For the Frosting:
- Beat the butter until creamy.
- Mix in vanilla extract and salt.
- Gradually add powdered sugar, mixing well.
- Add the milk and mix until desired consistency is reached.
- Squeeze red food coloring into the frosting until it reaches your desired pink hue.
- Spread the frosting over the cooled cookie bars.
- Sprinkle nonpareils for decoration.
Notes
- When the bars are done, a toothpick inserted should come out clean.
- Use room temperature eggs and butter for best results.
- Store in an airtight container at room temperature for up to 5 days.
